Nutrition Data Calculations
This section provides a more detailed analysis of how the nutritional values for a recipe item is calculated. Enterprise Manager calculates this data based on the nutrition information assigned to the company products used as components in the recipe. The system will not display partial nutrition data for a recipe, therefore all of the recipe’s “Major Ingredient” component products must be linked to a nutrition record before the system can perform these calculations.
In the following example the recipe includes 5 components, one of which is itself a recipe item (a sub-recipe). For the nutrition calculations, the system will check whether the nutrition data is associated with the sub-recipe’s component products or its company product record. If the nutrition data is associated with the sub-recipe’s company product, the system will use these values and ignore those linked to its components. In the example recipe, nutrition data is associated with the sub-recipe’s components.
The (manual) process of calculating the nutritional breakdown of a recipe is as follows:
- View the Recipe record – Verify the list of component products included in the recipe (including any sub-recipes).
- View the Company Product record of each component (and sub-recipes or their components, as necessary) – Determine the unit of measure to which the nutrition data is linked.
- Calculate the number of grams per product – For all products, nutrition values are stored per 100 grams of that product; the number of grams actually used in 1 Batch of the recipe must be calculated.
- Calculate the amount of each nutritional element – Example: the number of calories, fat calories, carbohydrates, etc. per component can now be calculated based on the number of calories per 100 grams of the product and the quantity used in the batch.
- For each nutritional element, sum the value of all components – Example: the number of calories, fat calories, carbohydrates, etc. per batch can now be calculated based on the number of calories in each of the components. If the recipe includes one or more sub-recipes, the nutritional values for the sub-recipe components must be summed and then adjusted to account for how much of that recipe was used in the main recipe.
Once nutrition data has been calculated, it can be seen on the Nutrition tab of the Recipe Details screen.
