Details: Recommended Order Preferences

The Recommended Order settings are divided into the following sections, listed from top to bottom, left to right.

 

  • Consumption Driven By — Indicates whether 'Guests', 'Days', or 'Sales' are used to calculate consumption.
  • Reorder Point — Determines when the Recommended Order value will be displayed in transaction screens.
  • Catering Orders deplete by
  • Menu Mix — When selected, catering orders will be created as a Customer Order but depleted via POS. These orders cannot be picklisted, invoiced, or reconciled; they will be closed automatically when the linked Daily Prep transaction is finalized.
  • Customer Order— When selected, catering orders will be created and depleted as a Customer Order.
  • Consumption Measured By — Indicates whether consumption for purchasing should be calculated based on Crunchtime 'Usage' data or POS 'Sales'data.
  • Historical Driven By — Indicates whether the historical data used in calculating consumption should come from 'Selected Periods', from 'Current/Historical' data saved in the system, or from the 'Menu Planner'.
  • Production Driven By — Indicates whether calculations in the Net-Chef Daily Prep module should come from 'Current/Historical' data saved in the system or from the 'Menu Planner'.
  • Consumption for Production Measured By — Indicates whether consumption for production should be calculated based on Crunchtime 'Usage' data or POS 'Sales'data.
  • Projected Consumption includes Min Par — Determines whether Min Par is included in the Daily Prep "Recommended Production for Prep" calculation.
  • If checked, Recommended Production for Prep = [ Projected Consumption + Min Par - Available ].
  • If not checked, Recommended Production for Prep = [ Projected Consumption - Available ].
  • Include Min Par when Proj. Cons > 0 — When checked, if Projected Consumption = 0 (i.e. is NOT > 0), the application will not calculate a Recommended Production For Prep quantity based on Min Par alone. (This can be checked only if "Projected Consumption includes Min Par" is checked.)
  • Set Sugg. Prod. less than Min Par to Min Par — When checked, if Recommended Production for Prep > 0 but < Min Par, this value will be set to Min Par; otherwise, the calculated value will be displayed.
  • Formula — Indicates how Need and Have quantities will be defined in order to calculate the Recommended Order for each product in purchasing transactions.
  • Sales Forecasting Based On — The Net-Chef Sales Forecasting module will use this preference to determine whether to calculate forecast data based on 'Menu Mix (Recipe Sales)' or 'Sales Mix (Register Sales)'. Recommended Order will use this forecast data when "Consumption" is part of the formula and "Consumption Driven By" is set to 'Guests' or 'Sales'.
  • Default based on — This setting will determine which reference values will be used as the default source for Forecasted Sales, Guests, and Checks. Options include: 'AI Forecast', 'Budgeted Sales', 'Last Year Actuals', 'Year-over-Year Trend', 'Average for Prior (Offset) 4 Weeks', 'Actuals for Prior (Offset) Week', 'Projected' (default), 'Last Week’s Forecasted'.
  • Incremental Sales — Indicates whether incremental sales forecasts can be entered on an 'Hourly' basis or per '15 Minutes'.
  • Offset for previous week's actuals: ___ weeks — The Net-Chef Sales Forecasting module will use this value to determine how many weeks to go back when retrieving recent sales data to display for user reference. If users wish to use sales data from the week immediately prior to the sales forecast week, they should enter ‘0’. If users want to see sales data for each weekday from 2 weeks prior to the sales forecast week, they should enter ‘1’.  The value entered here indicates how many ADDITIONAL weeks to go back.
  • Display check count data — If checked, Check Count data will be displayed in the Sales Forecasting screens. If not checked, these rows will not be displayed.
  • Dashboard task ___ days before week begin date — The value entered will determine the number of days before the week begins that Sales Forecasting task(s) will appear in the Daily Tasks section of the Net-Chef Dashboard.
  • Auto-Generate Sales Forecast — If checked, Forecasted Sales data will be populated automatically in the Sales Forecasting screen. This will use the selected "Default Based On" setting as the forecast data and be triggered by the "Dashboard Task ___ days before week begin date" to determine when the forecasts will be generated.
  • Projected Consumption
  • Import Projected Consumption — If checked, the Consumption portion of the Recommended Order formula (if enabled) and in the Recommended Production for Prep formula will be based on imported values and will not be calculated using parameters defined in this screen.
  • Includes Catering Orders — If checked, the Consumption portion of the Recommended Order formula (if enabled) and in the Recommended Production for Prep formula will be based on historical consumption PLUS open catering orders. The Customer Order module in Net-Chef will allow users to flag customer orders specifically as catering orders and link these orders to revenue centers.

 

Locations Only

  • Use Historical Consumption from — This feature only applies to locations using the 'Current/Historical' settings for the "Historical Driven By" & "Production Driven By" parameters; historical consumption for Menu Plans and Catering Orders will NOT be affected.  
  • Location (drop-down) — Authorized users can select a location to use as the source of historical consumption data for purposes of calculating projected consumption for ordering and production. When selected, the system will calculate historical consumption at both the source and target location and use whichever is larger. {Note}Closed: You must be sure to set the same "Consumption Driven By" setting (noted above) at both locations in order for the calculations to be valid. A location cannot be selected as a source location if it is itself using historical consumption from another location. Multiple target locations can use historical consumption from the same source location.
  • Through (calendar widget) — Select the date that the location should stop using historical consumption data from the source and start using its own historical data. {Note}Closed: This date must be at least 2 days later than the current date; more likely it will be 4-8 weeks later, depending at least partly on the Current/Historical time frame defined by the "Historical Driven By" setting. For example, if the Current/Historical setting is '4' (weeks), then you want to set the End Date to be at least four weeks out so that this location copies historical consumption data from the source location until there is enough of its own data to use.

  

Note: When a Daily Prep transaction only includes linked Catering Orders, it will ignore the following parameters when calculating Projected Consumption: "Projected Consumption includes Min Par", "Include Min Par when Proj Cons > 0", and "Set Sugg. Prod. less than Min Par to Min Par".
