Once the application determines which post periods to look at, the Consumption Measured By setting determines what kind of data will be used to calculate historical consumption for purchasing transactions, while the Consumption for Production Measured By setting determines what kind of data will be used to calculate historical consumption for recipe prep. For Production/Prep, the application will calculate historical values for a particular production date by including transactions only for dates in the Current/Historical date range that fall on the same day of the week as the date for which the consumption is being calculated
- Usage – If this option is selected, the application will calculate historical consumption based (primarily) on “Inventory” data (Beginning + Received - Ending) for the products/recipes. It will do this for each historical period and then add them together.
- Sales – If this option is selected, the application will calculate historical consumption based on Recipe Sales (“Menu Mix”) data and outgoing Commissary Orders, Customer Orders, Location Transfers, and Buffet Consumption for the products/recipes. It will do this for each historical period and then add them together.
