Recommended Order - Production Driven By
The Production Driven By setting determines whether prep will be based on historical production according to data in the system from posted periods or on projected consumption according to the menu plan. Tthe application will calculate historical values for a particular date by including transactions only for dates in the Current/Historical date range that fall on the same day of the week as the date for which the consumption is being calculated
- Current/Historical – This preference lets users determine the number of recent and historical periods to use in projecting prep needs, and to assign relative weights to the data. For example, if "Current" is set to 5 periods at 60%, this means data will be used from the most recently posted period and the four periods preceding it. And if "Historical" is set to 4 periods at 40%, this means that data will be used from the oldest posted period that is not more than one year old, and the three periods that followed it. The "Current" number will be multiplied by 0.60 (60%), and the "Historical" number will be multiplied by 0.40 (40%), and then these two numbers will be added together.
- Menu Planner – Check this box if Projected Consumption is to be derived from menus defined in this module, for recipes linked to a menu. Recipes not linked to a menu will use the Current/Historical setting above.
Note: Quantities and percentages in the "Historical" fields should only be set up if the location has a year’s worth of data. For new locations, "Current" periods should be used until there is sufficient historical data to make use of "Historical" post periods.
