Enter Forecasts By Dayparts & Revenue Centers
If Dayparts and Revenue Centers have been defined in Enterprise Manager, authorized users can set up forecasted sales by daypart for each revenue center. If this is done for one day, it MUST be done for each day of the week in order for Ideal Hours to calculate correctly on the labor schedule. Revenue Center forecast data will only be used in the Ideal Hours calculation if users apply Staffing Level Templates based on Revenue Center forecasts.
If a date is listed in the location’s Scheduled Closed Calendar, the application will display “(Scheduled Closed)” in the window's title bar. If a date has one or more records in the location’s Promotions or Holiday Calendar(s), the application will display alerts for these listings just below the window's title bar.
Note: This screen is not available for Cruise Lines.
- From the Sales Forecast detail screen, click the [...] command button in the Daypart Forecast header row that corresponds to a specific day.
- In the pop-up window, the application will display three tabs - one each for Sales (default), Guests, and Checks; click on a tab to select it. For new forecast by daypart records, the total value for the "default" Reference Data type will be distributed among the revenue centers based on the percentage of historical Sales/Guests/Checks (during each daypart) for all recipes at each revenue center (i.e. - if the default is "Projected", those values from the summary screen will be used in this screen.)
Example: The Lunch/Bar value is determined by looking back at the historical sales of all the recipes sold during times that make up the Lunch daypart and calculating the percentage of those recipes that were sold at the Bar.
- Edit the value for each Daypart/Revenue Center combination as needed. (The corresponding percentage will update automatically after exiting the cell.)
- To scale selected values up or down by a certain percentage, proceed as follows:
- Enter a percentage in the "Scale Values By" field. (Example: Enter '110' to calculate a 10% increase or '90' to calculate a 10% decrease.)
- Select one or more cells for scaling by clicking on one or more individual cells, a Daypart name to select all cells in the row, a Revenue Center name to select all cells in the column, or by clicking the Select All button. The selected cells will turn blue.
- Click the Scale Values By button to scale the selected values.
- Click Update.
- To recalculate the Revenue Center and Daypart subtotals and totals, click the Disk (Save) icon.
- A confirmation message will appear.
- If you need to make other changes, click Cancel, otherwise click OK.
Note: Once values have been saved in this window, the corresponding Forecast by Daypart values for that day cannot be edited in the summary screen.
