Scale Recipes
The Scale Recipes screen is used to adjust the batch size of a recipe to suit production needs. When the required yield is entered, the system recalculates the recipe component quantities and generates an updated recipe indicating the products and quantities required to produce the new yield.
The cost per portion and total cost of the recipe are displayed based on current product pricing information. Recipe cost information will only be available to authorized users. The Recipe Card report displays the same recipe component and preparation information but does not allow scaling and does not display costs. Only recipes that are active at the current location can be scaled.
- From the Reports menu, click Production, then click Scale Recipes.
- If necessary, you can filter the recipe list as follows:
- Click the Funnel (Filters) icon to access the filters and filter the screen by one of the columns or by Category/Subcategory/Microcategory.
- Click Filter by Attributes to open a pop-up listing the designated allergens and attributes. Check one or more boxes then click Apply.
- Click Filter by Components to open a window listing all company products that are used as recipe components; if necessary, check Include Component Recipes to include recipes that have a sub-recipe that includes the selected component. Check one or more boxes then click Apply.
- To restore the full recipe list, re-open the appropriate Filter pop-up, click Clear, then click Apply.
- Click the Product Name hyperlink to view the detail report for the selected recipe.
- Enter
the Batch Size, Portion Yield or Amount to be produced. Whichever field you edit, one of the others will automatically update to reflect your change. To see examples, click

- To update the component quantities, click Recalculate. To restore the default values, click Reset.
- If visible, authorized users can click the USDA Nutrition link to display or print nutrition information for the selected recipe.
- If the recipe has any files attached to it in Enterprise Manager, authorized users can click the File Name hyperlink to view the attachment.
- If a component product has any files attached to it in Enterprise Manager, authorized users can click the Product Name hyperlink to view the attachment.
- If necessary, you can click the -><- , <--> icon to minimize/maximize the report header.
- Click the Printer (Export) icon to download and print the recipe details.
- In the pop-up, set the
print options as needed, then click the Export button.
- From the detail screen, click Close (X) to return to the recipe list.
- From the summary screen, click Close (X) to close the report.
