Prep Report

The Prep Report will suggest prep quantities for all recipes active at this location that have been flagged by corporate to be included in this report. It can be used to plan production for traditional prep recipes, as well as recipes that are prepped informally and will not be produced through Net-Chef Daily Prep.

  • Recommended Order Setup – The biggest use case for this report is for prepping recipes that are not counted in inventory. For these recipes, there will never be any usage data for the location. "Consumption for Production Measured By" should be set to 'Sales' if you wish to calculate historical consumption based on Recipe Sales (Menu Mix) data.
  • Sales Forecasts – Because the consumption will be driven by sales, Sales Forecasts must be complete, accurate, and marked as "Reviewed" for the time frame selected to run the report.

Report Controls

Begin/End Date: Calendar widgets; range limited to 14 days from Begin Date.

Include Recipes With Daily Cons.= 0.00: Check this box to include recipes with a Projected Consumption = 0 . Otherwise, the report will only include recipes with Projected Consumption > 0.

Include Prep Time in Calculations: Check this box for Prep Time to be factored in to the calculations for Cons., Cons. in Inv Units, and Shelf Life Max  {Note}Closed: This cannot be unchecked if "Historical Driven By" includes 'Menu Planner' in the Recommended Order Setup.

Group By: No Grouping, Template (default), Category, Subcategory, Microcategory

Select Templates: This drop-down can be used to filter the report by one or more templates.

Promotions and Holidays: Hover over this icon to see any events defined for the location on these calendars in Enterprise Manager.

Funnel (Filters): Product #, Recipe Name, Category/Subcategory/Microcategory

Printer (Export): PDF, Excel, CSV formats; Page Break By Group (Y/N), Show Promotions and Holidays in Export (Y/N)

Report Columns:

  • Recipe Name – The recipe name defined in the recipe record.
  • Shelf Life – The Shelf Life & Unit defined in the recipe record.
  • Prep Time (hidden by default) – The Prep Time defined in the recipe record.
  • Batch Size – The Batch Size & Unit defined in the recipe record.
  • Product # (hidden by default) – The recipe product number, from the Recipe Details screen.
  • Storage Container (hidden by default) – The Default Storage Container defined in the recipe record.
  • Mgr. Sign Off (hidden by default) – Blank space for the manager to sign off on the proposed prep when the report is printed.
  • Inv. Unit (hidden by default) – The Portion Unit defined in the recipe record.
  • Temp. Seq. (hidden by default, available when filtered & grouped by Template) – Indicates the sequence order of the product on the selected template.

The columns below are displayed for each day included in the report.  {Note}Closed: For Menu Planner locations, if the consumption driver is "% of Guests" or "Portions/1000 Guests", the calculations for Daily Cons., Daily Cons. in Inv. Units, and Shelf Life Max will be based on passenger/crew counts from the Cruise Profile record.

  • On Hand – Blank space for the user to write in the on hand quantity when the report is printed.
  • Daily Cons. = The suggested number of batches needed for the day based on projected consumption, rounded based on the "Prep Report Cons. Rounding" rule defined for the recipe.
  • Daily Cons. in Inv. Units = The suggested number of portions needed for the day based on projected consumption, rounded based on the "Prep Report Cons. Rounding" rule defined for the recipe.
  • Shelf Life Max = The suggested number of batches needed for all of the days of shelf life based on projected consumption, rounded based on the "Prep Report Shelf Life Rounding" rule defined for the recipe.  {Note}Closed: The values for all days will be summed and the total will be rounded.
  • Prep Qty – Blank space for the user to write in the actual planned prep quantity.
