Buffet Consumption - Related Setup

This section describes some of the setup that users must or should complete in Enterprise Manager or Net-Chef prior to using the Buffet Consumption module.

Note: All setup should be completed in Enterprise Manager unless otherwise noted.

Recipes

Products | Recipe

In order to be eligible for Buffet Consumption, a recipe:

  • must be active (either on the Location tab or in the header), unless the recipe has an On Hand Qty > 0 at the location , in which case it will be available for depletion.
  • must have the "POS Decrement" set to 'Item' (either on the Location tab or in the header).
  • must have the "Recipe Class" set to 'Sales' on the Attributes tab (which is the default).  Recipes that should NOT be eligible for Buffet Consumption should have the "Recipe Class" set to 'Intermediate'.
  • must be an active Location Product at the location.

Application Users & User Group Security

In order to access the Buffet Consumption module, an Application User must be associated with a User Group with access to the (new) "NC-Daily Store Tasks – Buffet Consumption" control.  Once a user has access to the Buffet Consumption module, the ability to initiate (as opposed to view) Buffet Consumption transactions is controlled by the "NC-Buffet Consumption – Create" control.

Dayparts

General | Daypart

The system will allow users to create transactions for individual dayparts or for "All Day". Daypart records are required to do daypart-specific consumption. The daypart "Begin Time" will be used to sequence dayparts for the selection drop-down and for the calculation of daypart-specific "On Hand Qty".

Financial Calendar

Buffet Consumption transactions are performed in Post Calendar post periods, therefore the application will not allow a user to create a Buffet Consumption transaction that contains dates that occur after the last post date set up for the location. The Buffet Consumption process makes changes to product quantities in inventory, and this must occur within existing post periods.

Locations

  • Labor tab: If a "First Daypart for Scheduling" is defined, Net-Chef will use that to determine which Daypart to consider the earliest in lists and for sorting.
  • Date/Number Format tab: The Buffet Consumption screens will respect the location’s settings for "Date Format" and "Number Format" for display, data entry and validation.

Preferences: General

The "View Transactions for last ___ Post Cycles" setting will determine the default date range for retrieving and displaying transactions in the Buffet Consumption summary screen.   Older transactions can be retrieved by using the "Consumption Date" column filter.

Prep Stations 

Products | Prep Stations

A recipe does not need to be associated with a Prep Station in order to be included in a Buffet Consumption transaction. However, 'Prep Station' is one of the filter options for restricting the list of recipes, so to use this, recipes should set up accordingly.

Qualitative Judgments 

Products | Qualitative Judgments

A Qualitative Judgment is required in order to save a “Waste Qty” for a Recipe in Buffet Consumption.

Storage Locations

Products | Storage Locations

The Buffet Consumption transaction will allow users to group the list of recipes by Storage Location.

Storage Sequences 

Net-Chef | Inventory | Inventory Setup

Sequences defined in this screen can be used to sort recipe items within Storage Locations.

Templates  

Net-Chef | Administration | Update Templates

Product templates are not required for Buffet Consumption transactions, but 'Template' is available as a recipe filter. Template setup also allows users to sequence recipes within a template, and the Buffet Consumption transaction will allow users to apply these sequences to sort recipes when this filter is used. (The system will NOT use the template quantities.)
