Enter Buffet Consumption

The Buffet Consumption detail screen presents the user with a list of eligible prep recipes (i.e. "Production Type" = 'Production' and "POS Decrement" = 'Item').  The list of recipes will also include any other recipes that are set up for sale at the location but not for Daily Prep (i.e. "Production Type" = 'To Order' and "POS Decrement" = 'Item'); this will enable users to consume recipes that are received as finished items from another entity (e.g. soup purchased from a Commissary).

  1. From the Production menu, click Buffet Consumption.
  2. Click the New Buffet Consumption button.
  1. In the pop-up, enter or select the Consumption Date.
  2. Select the appropriate Daypart.
  3. If available, you can select an Outlet.  {Note}Closed: When one is selected, the screen will retrieve only the eligible Recipes which are linked to the Storage Location that is linked to the"Internal" Customer that is also linked to the selected Outlet.
  4. Enter a descriptive Memo.
  5. The Exclude Recipes With On Hand Quantity = 0 box is checked by default. If necessary, clear this check box to include recipes that are eligible for consumption but do not have any on hand (for reference purposes only, since consumption cannot be entered for these recipes).
  6. Click Continue.

Note: Click any column header to sort by the data in that column; defaults to "Recipe Name".

  1. If necessary, the Memo can be edited.
  2. To view the list of recipes by storage, select 'Storage Location' in the Group By drop-down. If necessary, check the Sort by Storage Sequence box to sort the list by the sequence values entered in the Inventory Setup screen.
  3. If necessary, use the Funnel (Filters) icon to filter the list.
  • If filtering by template, the user can check the Sort by Template Sequence box to sort the list by the sequence values entered for the selected template in the Templates screen.
  1. To download and print a consumption prep sheet, click the Printer (Export) icon.
  2. To record recipe consumption:
  1. Enter the amount of the recipe item that was not sold (if any) in the Leftover Qty field and the amount of the recipe item that was wasted (if any) in the Waste Qty field. The Consumed Quantity will be calculated as [ On Hand Qty - Leftover Qty - Waste Qty ]. Users CANNOT enter this quantity manually.

OR

  1. Click the Auto Consume On Hand Qty button to automatically populate the Consumed Qty field with the value in the On Hand Qty field for all recipes with no consumption entered.

Note: All quantities are in Inventory Units and can carry out to 2 decimal places. Recipes will be highlighted yellow if the "Consumed"  quantity exceeds or falls short of the Historical Consumption quantity, based on the location's "Buffet Quantity Alert %". This lets the user know if consumption is too high or too low compared to what is historically consumed.

  1. If a "Waste Qty" was entered for a recipe, select a Qualitative Judgment for that recipe. (This field will be highlighted in red to indicate that it's required.)  Closed<Pro Tip> 
  • To apply the same judgment to multiple recipes, use the drop-down in the header row, check the box in the Paste column for the appropriate recipes, then click the Paste button in the header.
  • To apply the same judgment to all recipes, check the Paste box in the header row and click the Paste button. When applying to all, this will only select recipes with an Adjustment Quantity <> 0.
  1. When ready, click the Disk (Save) icon.
  2. A confirmation message will be displayed, giving users the following options:
  • View Printable Adjustment – Click this to open the View screen, then click the Printer (Export) icon to download and print a copy of the transaction.
  • Create New Buffet Consumption – If you choose this option, go back to Step 3.
  1. When finished, click the Close button.

 

Once the transaction is saved, Net-Chef will deplete the "Consumed Qty" of each recipe from inventory and calculate the theoretical cost (Buffet Consumption will be costed using the current Issue Cost of the recipe item); this quantity/value will be displayed in the "Sold" column in inventory and reports. The system will also deplete the "Waste Qty" and create the appropriate inventory adjustment transaction; this quantity/value will be displayed in the "Adjusted" column in inventory and reports.
