Recommended Production/Prep - Consumption Driven By
At this point,Historical Driven By and Consumption Measured By have been used to calculate the historical consumption quantity. Next, Consumption Driven By will be applied, to project future consumption and determine the overall consumption quantity to use in the Recommended Order calculation.
Note: In all cases, the application will calculate historical values for a particular prep date by including transactions only for dates in the Current/Historical date range that fall on the same day of the week as the date for which the consumption is being calculated.
- Guests – If this option is selected, then consumption will be based on historical and forecasted guest counts for the stated number of Consumption Days. For cruise ship locations, it will take the historical guest count from the relevant cruise profiles and the projected guest count from the Cruise Detail setup screen. For non-cruise locations, it will take the historical guest counts from the Net-Chef Sales Transactions module and the forecasted guest counts from the Net-Chef Sales Forecasting module.
- .Projected Consumption = [ Total Historical Consumption ÷ Weighted Total Historical Guests) x Total Forecasted Guests ]
- Days – If this option is selected, consumption will be based on the number of days covered by the order.
- Projected Consumption = [ Total Historical Consumption ÷ Weighted Historical Consumption Days) x entered Consumption Days ]
- Sales – If this option is selected, then consumption will be based on historical and projected sales values for the stated number of Consumption Days. Historical sales amounts are taken from the Net-Chef Sales Transactions module and the forecasted guest counts from the Net-Chef Sales Forecasting module
- Projected Consumption = [ Total Historical Consumption ÷ Weighted Total Sales) x Total Forecasted Sales ]
Note: Is Sales Forecasting is not used, the application will use budgeted sales, pro-rating the budgeted sales values using the location’s "Projected Sales %" for the same day of the week as the prep date.
