Aggregate Consumption
A supply location such as a warehouse or production facility can base its "Recommended Order" calculation on the consumption at all of the locations it supplies. For example, if a supply location (commissary) is supplying products to five locations (restaurants), then to most accurately determine what the supply location needs to order, the historical consumption data should come from the consumption and sales of the locations being supplied.
To accommodate this, the Location setup screen in Enterprise Manager offers an "Aggregate" tool. This allows a manager to determine which other locations will be used to determine consumption for the supply location. This cannot be set up in Net-Chef.
Aggregation is specific to the "Consumption" portion of the Recommended Order formula. If a supply location uses Aggregation, historical sales or guest counts are calculated based on those at the aggregated locations, but projected sales or guest counts are calculated based on those at the supply location. The other potential elements of the formula ("Incoming," for example) will also be based on the supply location.
Note: If Aggregation is used, all of the aggregated locations need to have the same “Consumption Measured By” and “Consumption Driven By” settings in order to yield valid consumption data
